Mt. Tam
Cowgirl Creamery, Point Reyes Station, California
This small elegant cheese is one of my favorite cheeses from the Cowgirl Creamery. Maureen Cunnie uses pasteurized organic cow’s milk for this lovely cheese. It is aged 2-3 weeks resulting in a firm yet buttery and smooth texture with a mellow earthy flavor reminiscent of mushrooms.
Pond Hopper
Tumalo Farms, Bend, Oregon
Flavio DeCastilhos uses traditional Dutch and Italian methods to produce this lovely Farmstead cheese. It is made from pasteurized goat’s milk cheese and a local microbrew and is aged 2-3 months. The paste is snow white and has a yeasty aroma that brings out a soft nuttiness from deep within.
Seahive Cheddar
Beehive Creamery, Utah, Utah
Tim Welsh makes this semi– firm aged cheddar from made Jersey cow’s milk. The cheese is hand rubbed with honey and sea salt giving it a wonderful sweet and salty combination. This flavor profile with the cheese makes for one huge flavorful bite!
River Rogue Blue
Rogue Creamery, Central Point, Oregon
Cary Bryant makes this rich and creamy paste in the heart of Southern Oregon where the creamery has been in business since the 1930’s. With a deep and earthy flavor, this cheese has won many awards and
