Mt. Tam
Cowgirl Creamery, Point Reyes Station, California
This small elegant cheese is one of my favorite cheeses from the
Cowgirl Creamery. Maureen Cunnie uses pasteurized organic cow’s milk for this lovely cheese. It is aged 2-3 weeks resulting in a firm yet buttery and smooth texture with a mellow earthy flavor reminiscent of mushrooms.
Pond Hopper
Tumalo Farms, Bend, Oregon
Flavio DeCastilhos uses traditional Dutch and Italian methods to
produce this lovely Farmstead cheese. It is made from pasteurized goat’s milk cheese and a local microbrew and is aged 2-3 months. The paste is snow white and has a yeasty aroma that brings out a soft nuttiness from deep within.
Marisa
Carr Valley, La Valle, Wisconsin
The cave aged sheep’s milk cheese has a complex, sweet and slightly
rambunctious flavor. It took 1st place in its class at the
2005 American Cheese Society Competition.
Point Reyes Blue
Point Reyes Farm, Point Reyes, California
The Giacomini family produces this Farmstead using Jersey cows milk. The paste is creamy, veined raw cow’s milk cheese that is a complex blue with a balanced ripeness.
